CH3COONa – sodium acetate – is a white, crystalline solid with an acetic odor. Sodium acetate has found application in a wide range of industries. In the textile industry, it used to treat sulfuric acid waste and improve the wearing quality of finished fabrics. In foods, sodium acetate acts as a preservative and a flavoring agent. For instance, potato chips with sodium acetate have a distinctive "salt and vinegar" taste. Sodium acetate is added to many canned products including vegetables, meat, and fish. Sodium acetate is also used in heating pads, hand warmers, and hot ice. This last use is based on its ability to generate a large amount of heat as it crystallizes.
