Annatto is an orange-red spice and food coloring of natural origin. It is sourced from a tropical plant Bixa orellana, the seeds of which are crushed, then boiled in oil or water. The dye lends products a yellow-orange color. It is also used as a spice due to its nutmeg flavor. In the food industry, annatto is used to tint meats, cheeses, chips, and crackers an attractive color. Aside from the food industry, the dye is used in the production of cosmetics and medicine.
