Tannins possess colorant, tannic, and astringent properties, and can be found in many plants and fruits, including avocados, oak, pomegranates, strawberries, and tea leaves Tannins are used to tan leather, dye leather and fabrics, produce glue, and make ink. They’re also used as an additive (food coloring E181) to give foods and drinks a tart, astringent taste.
